Servings: 4

Ingredients

  • Red lentils (1 cup, rinsed and drained)
  • Onion (1 small, chopped)
  • Garlic (2 cloves, minced)
  • Cilantro (1/2 cup, chopped (plus more for garnish))
  • Cumin (1 teaspoon)
  • Salt (1/2 teaspoon (adjust to taste))
  • Black pepper (1/4 teaspoon (adjust to taste))
  • Olive oil (2 tablespoons (for cooking))
  • Lemon juice (1 tablespoon)
  • Garlic (1 clove (for sauce))
  • Cilantro (1 cup (for sauce))
  • Olive oil (2 tablespoons (for sauce))
  • Salt (to taste (for sauce))

Instructions

  1. In a food processor, blend the rinsed lentils until smooth, adding a little water if necessary to reach a pancake batter consistency.
  2. Add the chopped onion, minced garlic, chopped cilantro, cumin, salt, and black pepper to the lentil batter. Mix well to combine all the ingredients.
  3. Heat 2 tablespoons of olive oil in a non-stick pan over medium heat.
  4. Pour a ladleful of the lentil batter into the pan, spreading it out into a thin pancake shape. Cook for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
  5. Repeat the process with the remaining batter, adding more olive oil to the pan as needed.
  6. While the pancakes are cooking, prepare the cilantro sauce by blending together the cilantro, garlic, lemon juice, olive oil, and a pinch of salt in a food processor until smooth.
  7. Serve the warm lentil pancakes drizzled with the cilantro sauce, garnished with extra cilantro if desired.
