
Savory Lentil Pancakes with Cilantro Sauce

Ingredients
- Salt (to taste)
- Olive oil (1/4 cup)
- Lemon juice (2 tablespoons)
- Garlic (1 clove)
- Cilantro (1 cup)
- For the cilantro sauce ()
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Cumin (1 teaspoon)
- Cilantro (1/2 cup, chopped)
- Garlic (2 cloves, minced)
- Onion (1, finely chopped)
- Red lentils (1 cup, soaked overnight)
Instructions
- Drain the lentils and blend them in a food processor until smooth.
- Add the onion, garlic, cilantro, cumin, salt, and pepper to the lentil batter and mix well.
- Heat the olive oil in a pan over medium heat.
- Pour a ladleful of the batter into the pan and spread it out into a thin pancake.
- Cook for 2-3 minutes on each side, or until golden brown.
- Repeat with the remaining batter.
- To make the cilantro sauce, blend the cilantro, garlic, lemon juice, olive oil, and salt in a food processor until smooth.
- Serve the pancakes with the cilantro sauce.
