Savory Lentil Pancakes with Cilantro Sauce

- 1/4 teaspoon (adjust to taste) Black pepper
- 2 tablespoons (for cooking) Olive oil
- 1 tablespoon Lemon juice

Instructions
- In a food processor, blend the rinsed lentils until smooth, adding a little water if necessary to reach a pancake batter consistency.
- Add the chopped onion, minced garlic, chopped cilantro, cumin, salt, and black pepper to the lentil batter. Mix well to combine all the ingredients.
- Heat 2 tablespoons of olive oil in a non-stick pan over medium heat.
- Pour a ladleful of the lentil batter into the pan, spreading it out into a thin pancake shape. Cook for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
- Repeat the process with the remaining batter, adding more olive oil to the pan as needed.
- While the pancakes are cooking, prepare the cilantro sauce by blending together the cilantro, garlic, lemon juice, olive oil, and a pinch of salt in a food processor until smooth.
- Serve the warm lentil pancakes drizzled with the cilantro sauce, garnished with extra cilantro if desired.
