Ingredients

  • Salt (to taste)
  • Olive oil (1/4 cup)
  • Lemon juice (2 tablespoons)
  • Garlic (1 clove)
  • Cilantro (1 cup)
  • For the cilantro sauce ()
  • Olive oil (2 tablespoons)
  • Salt and pepper (to taste)
  • Cumin (1 teaspoon)
  • Cilantro (1/2 cup, chopped)
  • Garlic (2 cloves, minced)
  • Onion (1, finely chopped)
  • Red lentils (1 cup, soaked overnight)

Instructions

  1. Drain the lentils and blend them in a food processor until smooth.
  2. Add the onion, garlic, cilantro, cumin, salt, and pepper to the lentil batter and mix well.
  3. Heat the olive oil in a pan over medium heat.
  4. Pour a ladleful of the batter into the pan and spread it out into a thin pancake.
  5. Cook for 2-3 minutes on each side, or until golden brown.
  6. Repeat with the remaining batter.
  7. To make the cilantro sauce, blend the cilantro, garlic, lemon juice, olive oil, and salt in a food processor until smooth.
  8. Serve the pancakes with the cilantro sauce.
