Scacciata is a delightful traditional Sicilian stuffed bread that embodies the rich culinary heritage of Sicily. This warm, golden-brown bread is filled with a savory blend of gooey mozzarella, sharp Parmesan, fresh tomatoes, and sweet sautéed onions. Perfect as a main dish or a hearty snack, Scacciata is not just a meal; it's a taste of Sicilian history, often enjoyed during festivities and family gatherings.

Ingredients

Bread dough
4 cups, homemade or store-bought
Olive oil
2 tablespoons
Onions
2 medium, thinly sliced
Tomatoes
3 medium, diced
Salt
1 teaspoon, to taste
Black pepper
1/2 teaspoon, freshly ground
Mozzarella cheese
1 cup, shredded
Parmesan cheese
1/2 cup, grated

Instructions

  1. Prepare the bread dough according to your favorite recipe or use store-bought dough. Allow it to rise in a warm place for about 2 hours, or until doubled in size.
  2. In a large pan, heat the olive oil over medium heat. Add the sliced onions and sauté until they become soft and translucent, about 5-7 minutes.
  3. Stir in the diced tomatoes, season with salt and black pepper, and cook for an additional 10 minutes until the mixture is slightly thickened. Remove from heat and let cool slightly.
  4. Preheat the oven to 200°C (392°F).
  5. Once the dough has risen, divide it into two equal parts. Roll out one part on a floured surface to fit a greased baking dish.
  6. Place the rolled-out dough in the baking dish and spread the tomato and onion mixture evenly over it. Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  7. Roll out the second part of the dough and carefully place it over the cheese filling. Press the edges of the dough together to seal well.
  8. Bake in the preheated oven for about 40 minutes, or until the bread is golden brown and sounds hollow when tapped.
  9. Remove from the oven and allow to cool slightly before slicing. Serve warm for best flavor.
