8 slices, cut in half
Scallops
16 large, dry-packed

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each scallop with half a slice of bacon and secure it with a toothpick. Ensure the bacon is tightly wrapped to prevent unraveling during cooking.
  3. Heat the olive oil in a large skillet over medium-high heat. Once hot, carefully add the bacon-wrapped scallops.
  4. Cook for 2-3 minutes on each side, until the bacon is golden and crispy. Be cautious not to overcrowd the skillet; work in batches if necessary.
  5. Transfer the scallops to a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for an additional 5-7 minutes, or until the scallops are opaque and cooked through. The internal temperature should reach 125°F (52°C).
  7. Season with salt and freshly ground black pepper to taste.
  8. Serve immediately with lemon wedges on the side for a bright, zesty contrast.
