Scallops with XO Sauce

- 1 pound, large, fresh Scallops
- 2 tablespoons Olive oil
- 2 tablespoons Unsalted butter
- 2 cloves, minced Garlic
- 1/4 cup XO sauce
- 2, chopped (for garnish) Green onions

Instructions
- Rinse the scallops under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Carefully add the scallops to the skillet, making sure not to overcrowd the pan. Sear for about 2 minutes on each side, or until they are golden brown and cooked through. Remove the scallops from the skillet and set aside on a plate.
- In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.
- Stir in the XO sauce and cook for an additional minute, allowing the flavors to meld.
- Return the scallops to the skillet, tossing gently to coat them in the rich sauce. Cook for an additional minute to reheat the scallops.
- Serve the scallops immediately, drizzled with the XO sauce and garnished with chopped green onions.

- For an extra kick, consider adding a pinch of chili flakes to the butter and garlic mixture.
