Ingredients

Original recipe serves 4

Unsalted butter
1/2 cup (1 stick)
Garlic
4 cloves, minced
White wine
1/2 cup, dry
Lemon juice
2 tablespoons, freshly squeezed
Fresh parsley
1/4 cup, chopped
Salt
1/2 teaspoon, to taste
Black pepper
1/4 teaspoon, freshly ground, to taste

Instructions

  1. In a medium saucepan, melt the unsalted butter over medium heat until it starts to foam.
  2. Add the minced garlic to the saucepan and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned, as burnt garlic can become bitter.
  3. Pour in the dry white wine and freshly squeezed lemon juice, stirring to combine. Allow the mixture to simmer for about 2 minutes, letting the alcohol evaporate and the flavors meld.
  4. Remove the saucepan from heat and stir in the chopped fresh parsley. Adjust the seasoning with salt and freshly ground black pepper to taste.
  5. Serve the scampi sauce immediately over your favorite seafood, such as shrimp, scallops, or even grilled fish. It also pairs wonderfully with pasta for a delightful dish.

Tips

  • 💡 For a spicier twist, consider adding a pinch of red pepper flakes to the sauce while sautéing the garlic.
  • 💡 If you prefer a creamier sauce, stir in a splash of heavy cream at the end for a luxurious finish.
  • 💡 This sauce can be made in advance and gently reheated before serving, making it a great choice for entertaining.
