Scrumpy cider is a delightful and rustic beverage that hails from the picturesque cider orchards of the West of England. This traditional drink is crafted from a blend of apples, often varying in variety, allowing for an authentic taste of the region. The result is a refreshing, slightly effervescent cider with a complex flavor profile that varies with each batch. Ingredients
- Apples
- 10-12 medium, a mix of sweet and tart varieties
- Water
- 2-3 liters, depending on the juiciness of the apples
- Cider yeast
- 1 packet (typically 5-7 grams)
- Granulated sugar
- 1/2 to 1 cup (adjust to taste)
Instructions
- Start by washing the apples thoroughly to remove any dirt or pesticides. Cut them into quarters, discarding any bad spots.
- In a large, sanitized container, crush the apples using a wooden pole or mallet to release as much juice as possible. Aim for a pulp-like consistency.
- Add 2-3 liters of water to the apple mash. Stir the mixture well to combine.
- Sprinkle the cider yeast over the mixture according to packet instructions. This will kick-start the fermentation process!
- Cover the container with a clean cloth, securing it with a rubber band to allow airflow while keeping contaminants out. Place it in a cool, dark spot for about one week.
- After a week, strain the liquid through a fine mesh sieve or cheesecloth into a sanitized clean container, separating the juice from the pulp. Taste the cider; if it’s too dry for your liking, dissolve sugar in a little warm water and mix it into the cider as desired.
- Cover the container again and let it ferment for another two weeks. During this time, the flavors will develop further, creating a more complex taste.
- After two weeks, your scrumpy cider is ready! Chill it before serving and enjoy the fruits of your labor.
