2 tablespoons
Potatoes
4 medium, diced
Onion
1 large, chopped
Garlic
3 cloves, minced
Mixed seafood
1 pound (shrimp, scallops, and calamari)
Paprika
1 teaspoon
Salt
to taste
Black pepper
to taste
Fresh parsley
1/4 cup, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook, stirring occasionally, until they are golden brown and tender, about 10-12 minutes.
  3. Stir in the chopped onion and minced garlic, cooking until the onion is soft and translucent, about 5 minutes.
  4. Add the mixed seafood to the skillet along with the paprika, salt, and pepper. Cook, stirring gently, until the seafood is cooked through and opaque, about 5-7 minutes.
  5. Taste and adjust seasoning if necessary. Remove from heat.
  6. Sprinkle with freshly chopped parsley before serving.
