Seafood Udon Extravaganza

Ingredients

- 1 tablespoon Vegetable oil
- 4 cups Chicken broth
- 1 tablespoon Fish sauce
- 2 tablespoons Mirin
- 2 tablespoons Soy sauce
- 1 inch, grated Ginger
- 2 cloves, minced Garlic
- 2 stalks, sliced Green onions
- 2 heads, chopped Bok choy
- 1 cup, sliced Mushrooms
- 1 cup, sliced Fish cake
- 1 cup, cleaned and sliced Squid
- 1 cup Scallops
- 1 cup, peeled and deveined Shrimp
- 400g, cooked according to package instructions Udon noodles

Instructions
- Cook the udon noodles as per the package instructions. Once cooked, drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, cooking for approximately 1 minute until they release their aroma.
- Add the shrimp, scallops, squid, and sliced fish cake to the pot. Stir and cook for 2-3 minutes until the seafood is just cooked through.
- Add the sliced mushrooms, chopped bok choy, and half of the sliced green onions. Cook for another 2 minutes, until the vegetables are slightly tender.
- Pour in the chicken broth, soy sauce, mirin, and fish sauce. Stir well to combine all the ingredients. Bring the mixture to a boil, then reduce the heat to low, allowing it to simmer for 5 minutes so the flavors can meld together.
- Taste and season with salt and pepper as needed.
- Divide the cooked udon noodles between bowls. Ladle the flavorful seafood and vegetable broth over the noodles.
- Garnish with the remaining green onions. Serve hot and enjoy your homemade Japanese feast!

- Feel free to add other types of seafood like mussels or clams.
