  3. Cover the bowl with a clean cloth and let the batter rest at room temperature for at least 2 hours, or overnight for better fermentation, which enhances the flavor.
  4. Heat vegetable oil in a deep frying pan or kadai over medium heat. Ensure the oil is hot enough by dropping a small amount of batter into the oil; it should sizzle immediately.
  5. Take a small amount of batter in your hand and form a ring shape by slowly pouring the batter into the hot oil. You can adjust the size of the ring according to your preference.
  6. Fry the sel roti until it turns golden brown on both sides, gently flipping it to ensure even cooking. This should take about 2-3 minutes per side.
  7. Once cooked, remove the sel roti from the oil and place it on a paper towel to drain any excess oil.
