Senegalese Ginger Coffee

Transport yourself to the vibrant streets of Dakar with this Senegalese Ginger Coffee. This recipe perfectly blends robust coffee, spicy ginger, and aromatic spices to create a beverage that's sure to awaken your senses. Traditionally served as a part of 'Le Ndogou', the evening meal breaking the fast during Ramadan, this beverage is deeply rooted in Senegalese culture and is loved for its invigorating and refreshing qualities.

Ingredients

Milk
1 cup
Sugar
2 tablespoons
Cloves
2, whole
Cardamom
2 pods
Cinnamon
1 stick
Fresh ginger
1-inch piece, grated
Water
2 cups
Coffee
2 tablespoons, ground

Instructions

  1. In a medium-sized saucepan, combine the ground coffee, water, grated ginger, cinnamon stick, cardamom pods, and cloves.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to ensure that the coffee and spices are well integrated.
  3. Once boiling, reduce the heat to low and let it simmer for 5 minutes to allow the flavors to infuse.
  4. Remove the saucepan from the heat and allow the coffee to steep for an additional 5 minutes to fully extract the flavors from the spices.
  5. Using a fine-mesh strainer, strain the coffee into your favorite mugs, discarding the ginger and spices.
  6. Stir in the sugar and milk until well combined, adjusting to taste.
