Sernik - Traditional Polish Cheesecake

Ingredients
- 1 ½ cups Graham cracker crumbs
- ½ cup, melted Unsalted butter
- 24 ounces, softened Cream cheese
- 1 cup Granulated sugar
- to dust for serving Powdered sugar
- 1 cup Sour cream
- 3 large Eggs
- ¼ cup All-purpose flour
- 1 teaspoon Vanilla extract
- 1 tablespoon Lemon zest

Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the softened cream cheese and granulated sugar together until the mixture is smooth and creamy, ensuring there are no lumps.
- Add the sour cream, vanilla extract, and flour to the cream cheese mixture. Mix until well combined and smooth.
- Add the eggs, one at a time, beating well after each addition to ensure a light and fluffy texture. Stir in the lemon zest for a refreshing flavor.
- Pour the cream cheese mixture over the prepared crust in the springform pan, smoothing the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until the center is set and the top is lightly golden.
- Remove from the oven and let cool in the pan for 10 minutes. Then, carefully remove the sides of the springform pan.
- Allow the sernik to cool completely at room temperature, then refrigerate for at least 4 hours or overnight to set fully.
- Before serving, dust the top of the sernik with powdered sugar for a beautiful presentation.
