Sernik, a beloved Polish cheesecake, delights the senses with its creamy texture and rich flavor. This traditional dessert, made with velvety cream cheese, fresh eggs, and a buttery graham cracker crust, is a staple at family gatherings and celebrations in Poland. Ingredients

Graham cracker crumbs
1 ½ cups
Unsalted butter
½ cup, melted
Cream cheese
24 ounces, softened
Granulated sugar
1 cup
Powdered sugar
to dust for serving
Sour cream
1 cup
Eggs
3 large
All-purpose flour
¼ cup
Vanilla extract
1 teaspoon
Lemon zest
1 tablespoon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a separate mixing bowl, beat the softened cream cheese and granulated sugar together until the mixture is smooth and creamy, ensuring there are no lumps.
  4. Add the sour cream, vanilla extract, and flour to the cream cheese mixture. Mix until well combined and smooth.
  5. Add the eggs, one at a time, beating well after each addition to ensure a light and fluffy texture. Stir in the lemon zest for a refreshing flavor.
  6. Pour the cream cheese mixture over the prepared crust in the springform pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 55-60 minutes, or until the center is set and the top is lightly golden.
  8. Remove from the oven and let cool in the pan for 10 minutes. Then, carefully remove the sides of the springform pan.
  9. Allow the sernik to cool completely at room temperature, then refrigerate for at least 4 hours or overnight to set fully.
  10. Before serving, dust the top of the sernik with powdered sugar for a beautiful presentation.
