Servings: 4

Ingredients

Lettuce leaves
12 large, for wrapping
Fresh cilantro
1/4 cup, chopped
Sesame seeds
2 tablespoons, toasted
Honey
1 tablespoon
Rice vinegar
2 tablespoons
Soy sauce
2 tablespoons
Sesame oil
1 tablespoon
Cucumber
1 large, thinly sliced
Shrimp
1 pound, peeled and deveined
Garlic
2 cloves, minced (optional)
Red pepper flakes
1/4 teaspoon (optional for spice)

Instructions

  1. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, and toasted sesame seeds to create the dressing. If you prefer a bit of heat, add minced garlic and red pepper flakes to the mixture.
  2. In a separate bowl, combine the cooked shrimp with the dressing and toss until the shrimp are evenly coated. Allow to marinate for about 10 minutes for enhanced flavor.
  3. Prepare your lettuce leaves by rinsing them under cold water and patting them dry. Select the largest leaves for wrapping.
  4. On each lettuce leaf, place a few slices of cucumber followed by 3 pieces of the marinated shrimp.
  5. Sprinkle chopped cilantro over the shrimp and cucumber for a burst of freshness.
  6. Fold the sides of the lettuce leaf over the filling and roll it up tightly, securing the contents within the leaf.
  7. Repeat the process with the remaining lettuce leaves and filling.
  8. Serve these delightful wraps immediately as a refreshing appetizer or light meal, and enjoy the vibrant flavors!
