Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.
- In a separate bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Ensure there's enough oil to submerge the sfinge.
- Using a spoon or cookie scoop, drop spoonfuls of the batter into the hot oil, frying only a few at a time to avoid overcrowding. Cook until golden brown, about 2-3 minutes per side.
- Carefully remove the sfinge from the oil using a slotted spoon and drain on paper towels.
- Serve warm, drizzled with honey or sprinkled with powdered sugar.
Tips
- For an extra touch of flavor, consider adding a pinch of cinnamon or nutmeg to the batter.
- These pastries can also be enjoyed with a side of whipped cream or chocolate sauce for an indulgent twist.
