Instructions
- Begin by cooking the Shanghai noodles according to the package instructions. Once cooked, drain them and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat until shimmering.
- Add the minced garlic and grated ginger to the pan. Stir-fry for about 1 minute, allowing the aromas to fill the air.
- Next, toss in the julienned carrots, sliced bell peppers, and shredded cabbage. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp, retaining their vibrant colors.
- Push the vegetables to one side of the pan, creating space on the opposite side for the noodles.
