Sheer Kurma

Sheer Kurma, a name that translates to 'Milk with Dates', is a time-honored Indian dessert that graces the table during festive celebrations. This luxurious dessert is a symphony of flavors, with fine vermicelli cooked to perfection in rich, creamy milk, and generously studded with dates and a medley of dry fruits. Each spoonful offers a delightful crunch, making it a beloved treat for all ages. This dessert is not just a feast for the taste buds, but also a celebration of culture and tradition, as it traces its roots back to the royal kitchens of the Mughal era.

Serves 4-6

Ingredients

Saffron strands
a few
Cardamom powder
1/2 teaspoon
Mixed dry fruits (almonds, pistachios, cashews)
1/2 cup, finely chopped
Dates
1/2 cup, finely chopped
Sugar
1/2 cup
Milk
1 liter
Ghee
2 tablespoons
Vermicelli
1/2 cup

Instructions

  1. Heat 2 tablespoons of ghee in a pan over medium heat. Add the vermicelli and roast gently, stirring continuously until it turns a golden-brown color. Be careful not to burn it.
  2. In a separate large pot, bring the milk to a boil. Once it starts boiling, reduce the heat to low, and add the roasted vermicelli. Simmer until the vermicelli is fully cooked.
  3. Add 1/2 cup of sugar to the pot and stir until it is completely dissolved.
  4. Next, add the finely chopped dates and mixed dry fruits to the pot. Stir well to combine.
  5. Sprinkle in the cardamom powder and add a few saffron strands for a touch of color and a subtle, aromatic flavor.
  6. Cook the mixture on low heat for 5-7 minutes until it thickens to a creamy consistency.
  7. Serve the Sheer Kurma hot or chilled, as per your preference. It can be garnished with a few extra chopped dry fruits or a sprinkle of cardamom powder before serving.

Tips

  • 💡 For a vegan alternative, replace the milk with almond milk and ghee with coconut oil.
  • 💡 The dessert thickens with time, so adjust the milk quantity based on your preferred consistency.
  • 💡 You can add other dry fruits like raisins or walnuts for extra texture and taste.
