Experience a royal treat with Shikampur Kebab, a culinary gem from the kitchens of the Nizams of Hyderabad. This succulent dish is finely minced meat, seasoned with aromatic spices, filled with a zesty mixture of onions and spices, and fried to golden perfection. The resulting kebab is a harmonious blend of flavors that is a true testament to Hyderabadi cuisine's rich and diverse heritage.

Servings: 4

Ingredients

Oil
2 tablespoons for frying
Salt
1 teaspoon or to taste
Coriander leaves
1/4 cup, finely chopped
Garam masala
1 teaspoon
Turmeric powder
1/2 teaspoon
Ginger garlic paste
1 tablespoon
Green chilies
2, finely chopped
Onions
2 medium, finely chopped
Minced meat
500 grams

Instructions

  1. In a pan over medium heat, combine the minced meat, ginger garlic paste, turmeric powder, and salt. Cook until the meat is thoroughly cooked and all moisture has evaporated.
  2. Remove from heat and let the meat cool to room temperature. Once cooled, transfer the meat to a grinder and process it into a fine paste.
  3. In a separate bowl, prepare the spicy filling by combining chopped onions, green chilies, garam masala, and coriander leaves.
  4. Take a portion of the ground meat and flatten it in the palm of your hand. Place a spoonful of the onion mixture in the center, then bring the edges together to form a patty, ensuring the filling is completely enclosed.
  5. Repeat this process with the remaining meat and onion mixture.
  6. Heat oil in a pan over medium heat. Fry the kebabs in batches until they're golden brown on both sides, ensuring not to overcrowd the pan.
  7. Serve these delectable Shikampur Kebabs piping hot, accompanied by a refreshing mint chutney or a cool yogurt dip. Enjoy a taste of Hyderabadi royalty with every bite!
