Instructions
- In a pan over medium heat, combine the minced meat, ginger garlic paste, turmeric powder, and salt. Cook until the meat is thoroughly cooked and all moisture has evaporated.
- Remove from heat and let the meat cool to room temperature. Once cooled, transfer the meat to a grinder and process it into a fine paste.
- In a separate bowl, prepare the spicy filling by combining chopped onions, green chilies, garam masala, and coriander leaves.
- Take a portion of the ground meat and flatten it in the palm of your hand. Place a spoonful of the onion mixture in the center, then bring the edges together to form a patty, ensuring the filling is completely enclosed.
- Repeat this process with the remaining meat and onion mixture.
- Heat oil in a pan over medium heat. Fry the kebabs in batches until they're golden brown on both sides, ensuring not to overcrowd the pan.
- Serve these delectable Shikampur Kebabs piping hot, accompanied by a refreshing mint chutney or a cool yogurt dip. Enjoy a taste of Hyderabadi royalty with every bite!
Tips
- For a healthier alternative, these kebabs can also be baked or grilled. Adjust the amount of green chilies according to your preference of heat. For a richer taste, you can add a spoonful of clarified butter (ghee) in the filling.
