Ingredients

Basmati rice
2 cups
Water
4 cups
Salt
1 teaspoon
Butter
3 tablespoons
Saffron threads
1 teaspoon
Sugar
1/4 cup
Dried apricots
1/2 cup, chopped
Dried cranberries
1/2 cup
Almonds
1/4 cup, slivered
Pistachios
1/4 cup, shelled and chopped

Instructions

  1. Begin by rinsing the basmati rice under cold water until the water runs clear. This step helps to remove excess starch, ensuring fluffy rice.
  2. Soak the rinsed rice in water for 30 minutes, then drain it thoroughly.
  3. In a small bowl, dissolve the saffron threads in 2 tablespoons of hot water. This will allow the saffron to release its vibrant color and aromatic flavor.
  4. In a large pot, melt the butter over medium heat. Once melted, add the soaked and drained rice and sauté for about 5 minutes, stirring gently to coat the rice with the butter.
  5. Add the dissolved saffron, sugar, chopped dried apricots, dried cranberries, slivered almonds, chopped pistachios, and salt to the pot. Mix well to evenly distribute the ingredients.
  6. Pour the water into the pot and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot tightly, and let it simmer for approximately 20 minutes, or until the rice is tender and the liquid has been absorbed.
  7. After cooking, remove the pot from the heat and let it sit, covered, for an additional 10 minutes. This resting period allows the flavors to meld.
  8. Finally, fluff the rice gently with a fork before serving to separate the grains and enhance the presentation. Serve Shirin Polo hot as a main course or as a delightful side dish.
