Chicken breast
1.5 pounds, cut into bite-sized cubes
Plain yogurt
1 cup
Garlic
4 cloves, minced
Lemon juice
3 tablespoons
Olive oil
2 tablespoons
Paprika
1 tablespoon
Cumin
1 teaspoon
Coriander
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Red pepper flakes
1/2 teaspoon
Wooden skewers
8 (soaked in water for 30 minutes)
Bell peppers
1 cup, cut into chunks (any color)
Red onion
1 medium, cut into chunks
Cherry tomatoes
1 cup
Garlic sauce
for serving

Instructions

  1. In a large bowl, whisk together the yogurt, minced garlic, lemon juice, olive oil, paprika, cumin, coriander, salt, black pepper, and red pepper flakes until well combined to create the marinade.
  2. Add the chicken breast cubes to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight to allow the flavors to meld.
  3. Preheat your grill to medium-high heat, ensuring it is well-oiled to prevent sticking.
  4. While the grill heats, prepare your skewers by threading the marinated chicken pieces onto the wooden skewers, alternating with chunks of bell peppers, red onion, and cherry tomatoes for added color and flavor.
  5. Place the skewers on the grill, cooking for about 10-12 minutes. Turn occasionally to achieve even grilling, until the chicken is cooked through and has a nice char.
  6. Once cooked, remove the skewers from the grill and allow them to rest for a few minutes before serving.
  7. Serve your Shish Tawook skewers hot, accompanied by rice, a fresh salad, and a generous drizzle of garlic sauce or tahini sauce for an authentic touch.
