Chicken breasts
2 pounds, boneless and skinless
Taco seasoning
2 tablespoons
Olive oil
2 tablespoons
Onion
1 medium, diced
Garlic
3 cloves, minced
Chicken broth
1 cup
Lime juice
2 tablespoons, freshly squeezed
Corn or flour tortillas
8, warmed
Salt
to taste

Instructions

  1. Season the chicken breasts generously with taco seasoning on both sides, ensuring even coverage for maximum flavor.
  2. In a large skillet, heat the olive oil over medium heat until shimmering.
  3. Add the seasoned chicken breasts to the skillet and cook until browned, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.
  5. Pour in the chicken broth and lime juice, scraping up any browned bits from the bottom of the skillet to enhance the flavor. Bring the mixture to a simmer.
  6. Return the browned chicken breasts to the skillet, ensuring they are covered with the broth mixture. Cover the skillet and let it cook for 20-25 minutes, or until the chicken is cooked through and tender.
  7. Once cooked, remove the chicken from the skillet and shred it using two forks. Mix it back with the remaining broth for extra flavor and moisture.
  8. In a separate skillet or in the oven, heat the tortillas until warm and pliable.
