Refreshing Shrimp and Scallop Ceviche

  • Orange juice (1/4 cup, freshly squeezed)
  • Red onion (1/2 cup, finely chopped)
  • Cilantro (1/4 cup, chopped)
  • Tomato (1 cup, diced)
  • Cucumber (1 cup, diced)
  • Avocado (1 large, diced)
  • Jalapeno (1, seeded and minced)
  • Salt (to taste)
  • Black pepper (to taste)
  • Tortilla chips (for serving)

Instructions

  1. In a large bowl, combine the shrimp, scallops, lime juice, lemon juice, and orange juice. Mix well to ensure all the seafood is fully coated in the citrus juices.
  2. Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour, or until the seafood is opaque and cooked through by the acidity of the juices.
