Serves 2

Ingredients

Shrimp
1 pound, peeled and deveined
Bacon
4 slices
Lettuce
2 leaves, washed and dried
Tomato
1 large, sliced
Bread
4 slices (your choice of white, whole grain, or sourdough)
Mayonnaise
1/4 cup
Lemon juice
1 tablespoon
Salt
to taste
Pepper
to taste

Instructions

  1. In a bowl, combine the shrimp, lemon juice, salt, and pepper. Let marinate for 5 minutes to infuse the flavors.
  2. In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let drain on paper towels.
  3. In the same skillet, add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove and set aside.
  4. Toast the bread slices in the skillet until golden brown and crispy.
  5. Spread mayonnaise evenly on one side of each toasted bread slice.
  6. Layer one slice with lettuce, followed by tomato slices, cooked shrimp, and crispy bacon.
  7. Top with the remaining slice of bread, mayo side down, to complete the sandwich.
  8. Cut the sandwiches in half and serve immediately for the best flavor and texture.

Tips

  • 💡 For a spicy kick, add a dash of cayenne pepper or a few drops of hot sauce to the mayonnaise.
  • 💡 Experiment with different types of bread such as ciabatta or a toasted baguette for added texture and flavor.
  • 💡 Feel free to add sliced avocado for creaminess or pickles for an extra crunch.
