Experience a taste of the tropics with this Refreshing Shrimp Ceviche! Bursting with zesty citrus flavors, succulent shrimp, and a colorful medley of fresh vegetables, this dish is a delightful celebration of coastal Latin American cuisine. Originating from ancient civilizations, ceviche was traditionally made with freshly caught fish marinated in citrus juices, allowing the acids to 'cook' the seafood. This modern take features tender shrimp, making it a perfect dish for warm days or festive gatherings. Serve it chilled alongside crispy tortilla chips for a refreshing and vibrant appetizer that will leave your guests craving more!

Servings: 4-6

1 pound, peeled and deveined

1 teaspoon
Lemon juice

Lime juice
1/4 cup, freshly squeezed
Tomatoes
2 medium, diced
Red onion
1/2 medium, finely chopped
Cilantro
1/4 cup, chopped
Jalapeño

for serving

Instructions

  1. In a large pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain the shrimp and allow them to cool.
  2. While the shrimp cools, in a large mixing bowl, combine the freshly squeezed lime juice and lemon juice to create a bright and zesty marinade.
  3. Once the shrimp has cooled, cut it into bite-sized pieces and add it to the bowl with the citrus juices. Allow the shrimp to marinate for 10 minutes, soaking up all the tangy flavors.
  4. Add the diced tomatoes, red onion, chopped cilantro, minced jalapeño, and diced avocado to the bowl. Season with salt to taste and gently toss the mixture to ensure all ingredients are evenly combined.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together, enhancing the freshness and vibrancy of the ceviche.
  6. Serve the shrimp ceviche chilled, accompanied by crispy tortilla chips for scooping and enjoying every delightful bite!
