Instructions
- Begin by soft-boiling the eggs. Place them in a pot of boiling water for 6-7 minutes, then transfer them to an ice bath to stop the cooking process. Once cooled, peel and set aside.
- Cook the ramen noodles according to package instructions. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and ginger, cooking for about 1 minute until fragrant, taking care not to burn them.
- Add the shrimp to the pot and sauté until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp from the pot and set aside.
- In the same pot, pour in the chicken broth and soy sauce. Bring the mixture to a gentle boil.
- Add the chopped bok choy into the broth and cook for 2-3 minutes until wilted and tender.
- Divide the cooked ramen noodles between two bowls. Top each bowl with the cooked shrimp, wilted bok choy, and sliced green onions.
- Slice the soft-boiled eggs in half and place on top of the ramen.
- Drizzle each bowl with sesame oil and sprinkle with chili flakes to taste.
