Sichuan Sesame Noodles

Ingredients

Chinese egg noodles
8 ounces
Toasted sesame seeds
2 tablespoons
Cucumber
1, julienned
Green onions
2, thinly sliced
Chili oil
2 tablespoons
Sichuan peppercorns
1 teaspoon, crushed
Rice vinegar
2 tablespoons
Soy sauce
3 tablespoons
Ginger
1 tablespoon, grated
Garlic
2 cloves, minced
Sesame oil
2 tablespoons

Instructions

  1. Bring a large pot of salted water to a boil. Cook the Chinese egg noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the noodles.
  2. In a large mixing bowl, whisk together the sesame oil, minced garlic, grated ginger, soy sauce, rice vinegar, crushed Sichuan peppercorns, and chili oil until well combined.
  3. Add the cooled noodles to the bowl and toss gently to coat them evenly with the sauce.
  4. Garnish with the sliced green onions and julienned cucumber. Sprinkle toasted sesame seeds generously on top.
