- Chinese egg noodles (8 ounces)

- Cucumber (1, julienned)

- Chili oil (2 tablespoons)
- Sichuan peppercorns (1 teaspoon, crushed)
- Rice vinegar (2 tablespoons)
- Soy sauce (3 tablespoons)
- Ginger (1 tablespoon, grated)
- Garlic (2 cloves, minced)
- Sesame oil (2 tablespoons)
Instructions
- Bring a large pot of salted water to a boil. Cook the Chinese egg noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the noodles.
- In a large mixing bowl, whisk together the sesame oil, minced garlic, grated ginger, soy sauce, rice vinegar, crushed Sichuan peppercorns, and chili oil until well combined.
