Instructions
- Rinse the herring fillets under cold water and pat them dry with paper towels.
- In a saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, and allspice berries. Bring to a boil over medium heat, stirring until the sugar and salt are fully dissolved. Remove from heat and allow the brine to cool to room temperature.
- Place the herring fillets in a glass or ceramic dish, ensuring they are arranged neatly. Pour the cooled brine over the herring, ensuring the fillets are fully submerged.
- Cover the dish with plastic wrap or a lid and refrigerate for at least 24 hours, allowing the flavors to meld. For a stronger flavor, marinate for up to 3 days.
- Before serving, carefully drain the herring and discard the brine.
- Arrange the herring fillets on a serving platter and garnish with thinly sliced red onion and freshly chopped dill.
- Serve chilled, accompanied by crispbread and a homemade mustard sauce.
Tips
- For an extra flavor boost, consider adding a few slices of lemon or a dash of chili flakes to the brine.
- Sill pairs wonderfully with boiled potatoes and a fresh salad for a complete meal.
