Herring fillets
1 pound, cleaned and filleted
Fresh dill
1/4 cup, chopped
Red onion
1, thinly sliced
Allspice berries
1 teaspoon
Black peppercorns
1/2 teaspoon
Salt
1/4 cup
Sugar
1/4 cup
Water
1 cup
White vinegar
1 cup
Mustard Sauce
for serving

Instructions

  1. Rinse the herring fillets under cold water and pat them dry with paper towels.
  2. In a saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, and allspice berries. Bring to a boil over medium heat, stirring until the sugar and salt are fully dissolved. Remove from heat and allow the brine to cool to room temperature.
  3. Place the herring fillets in a glass or ceramic dish, ensuring they are arranged neatly. Pour the cooled brine over the herring, ensuring the fillets are fully submerged.
  4. Cover the dish with plastic wrap or a lid and refrigerate for at least 24 hours, allowing the flavors to meld. For a stronger flavor, marinate for up to 3 days.
  5. Before serving, carefully drain the herring and discard the brine.
  6. Arrange the herring fillets on a serving platter and garnish with thinly sliced red onion and freshly chopped dill.
  7. Serve chilled, accompanied by crispbread and a homemade mustard sauce.
