Sincronizadas
Sincronizadas are a delightful Mexican dish that combines the comforting flavors of melted cheese with the heartiness of tortillas. Originating from the streets of Mexico, they are similar to quesadillas, but with a unique twist. Perfect for a quick meal or a snack, these cheesy sandwiches can be filled with your choice of meats or enjoyed as a vegetarian delight. Serve them hot with a side of fresh guacamole, tangy salsa, and creamy sour cream for a truly irresistible experience!
Ingredients
- 4 large Flour tortillas
- 2 cups, shredded Cheese (e.g. cheddar or Monterey Jack)
- 1 cup, diced (optional) Cooked chicken or ham
- 1 cup, for serving Guacamole
- 1 cup, for serving Sour cream
- 1 cup, for serving Salsa

Instructions
- Preheat a skillet or griddle over medium heat.
- Place one tortilla on the skillet and sprinkle half of the shredded cheese evenly over the tortilla.
- If using, add the diced chicken or ham on top of the cheese for added flavor and heartiness.
- Carefully place another tortilla on top to create a sandwich.
- Cook for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese starts to melt.
- Using a spatula, carefully flip the sincronizada and cook for another 2-3 minutes, or until the second side is golden brown and the cheese is fully melted.
- Remove from the skillet and repeat the process with the remaining tortillas and filling.
- Cut each sincronizada into quarters and serve hot with salsa, sour cream, and guacamole for dipping.
Tips
- For a spicier version, add sliced jalapeños or diced green chilies between the layers of cheese.
- You can use corn tortillas for a gluten-free option, but reduce the cooking time slightly to avoid breaking.
- Experiment with different cheeses, such as Oaxaca or Queso Fresco, for varied flavors.
