Instructions
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the minced garlic and sauté for about 1 minute, or until fragrant, taking care not to burn it.
- Stir in the diced tomatoes and cook for 5 minutes, allowing them to soften and release their juices.
- Pour in the white wine, increase the heat slightly, and let it simmer for 2 minutes to reduce a bit.
- Add the fresh shrimp to the skillet, seasoning with salt, black pepper, and crushed red pepper flakes. Stir gently to coat the shrimp in the sauce.
- Cook the shrimp for 5-7 minutes, or until they turn pink and opaque, stirring occasionally.
- Once cooked, remove from heat and sprinkle with chopped parsley. Stir to combine and enhance the flavor.
- Serve the Skampi na Buzaru hot, accompanied by crusty bread for dipping or over a bed of pasta for a more filling meal.
Tips
- For a richer flavor, you can add a splash of seafood stock or broth along with the white wine.
- Feel free to toss in some capers or olives for added brininess.
- If you prefer a milder version, reduce the amount of crushed red pepper flakes.
