Skampi Na Buzaru

Skampi na Buzaru is a delightful traditional Croatian dish that showcases the fresh, briny flavors of shrimp bathed in a rich tomato and white wine sauce. This dish is not only a staple of Croatian coastal cuisine but also embodies the essence of Mediterranean cooking, where the simplicity of fresh ingredients creates a symphony of flavor. Serve it with crusty bread to soak up the delicious sauce or over a bed of pasta for a hearty meal. Each bite transports you to the sun-soaked shores of the Adriatic, making it a perfect dish for a special occasion or a cozy dinner at home.

Ingredients

Fresh shrimp
1 pound, peeled and deveined
Olive oil
3 tablespoons
Garlic
4 cloves, minced
Tomatoes
2 cups, diced (fresh or canned)
White wine
1/2 cup (preferably dry white wine)
Crushed red pepper flakes
1/2 teaspoon (adjust to taste)
Salt
to taste
Black pepper
to taste
Fresh parsley
1/4 cup, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the minced garlic and sauté for about 1 minute, or until fragrant, taking care not to burn it.
  3. Stir in the diced tomatoes and cook for 5 minutes, allowing them to soften and release their juices.
  4. Pour in the white wine, increase the heat slightly, and let it simmer for 2 minutes to reduce a bit.
  5. Add the fresh shrimp to the skillet, seasoning with salt, black pepper, and crushed red pepper flakes. Stir gently to coat the shrimp in the sauce.
  6. Cook the shrimp for 5-7 minutes, or until they turn pink and opaque, stirring occasionally.
  7. Once cooked, remove from heat and sprinkle with chopped parsley. Stir to combine and enhance the flavor.
  8. Serve the Skampi na Buzaru hot, accompanied by crusty bread for dipping or over a bed of pasta for a more filling meal.

Tips

  • 💡 For a richer flavor, you can add a splash of seafood stock or broth along with the white wine.
  • 💡 Feel free to toss in some capers or olives for added brininess.
  • 💡 If you prefer a milder version, reduce the amount of crushed red pepper flakes.
