
Slow Cooker Bottom Round Roast
This tender and juicy bottom round roast is slow cooked to perfection with a flavorful blend of herbs and spices.
Ingredients
- Water (2 tablespoons)
- Cornstarch (2 tablespoons)
- Beef broth (1 cup)
- Salt and pepper (to taste)
- Dried rosemary (1 tablespoon)
- Dried thyme (1 tablespoon)
- Onion powder (1 tablespoon)
- Garlic powder (1 tablespoon)
- Olive oil (2 tablespoons)
- Bottom round roast (3 pounds)
Instructions
- In a small bowl, mix together the garlic powder, onion powder, thyme, rosemary, salt, and pepper.
- Rub the spice mixture all over the bottom round roast.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the roast and sear on all sides until browned, about 5 minutes per side.
- Transfer the roast to a slow cooker.
- Pour the beef broth over the roast.
- Cover and cook on low for 8 hours, or until the roast is tender and cooked through.
- In a small bowl, whisk together the cornstarch and water.
- Stir the cornstarch mixture into the slow cooker and cook on high for an additional 30 minutes, or until the sauce has thickened.
- Slice the roast and serve with the thickened sauce.
