Authentic Chinese Stinky Tofu

Fear not the name! Stinky Tofu, or Chou Dofu, is a renowned delicacy hailing from the bustling street markets of China. Its strong, unique aroma is a siren call to food lovers, while its crispy exterior and soft interior make for an irresistible texture. Once you've taken a bite, the surprisingly delicate and savory flavors of fermented tofu, coupled with a kick of chili and tangy soy sauce, will make you an instant fan.

Serves 2-3

Ingredients

Firm tofu
1 block
Vegetable oil
enough for deep frying
Green onions
3, chopped
Garlic
2 cloves, minced
Chili sauce
2 tablespoons
Soy sauce
2 tablespoons

Instructions

  1. Cut the tofu into 1-inch cubes. This size is perfect for ensuring a crispy exterior and a soft, creamy interior.
  2. Heat the vegetable oil in a deep pan over medium-high heat. You want enough oil so that the tofu pieces can be fully submerged.
  3. Carefully place the tofu pieces into the hot oil. Fry them until they're golden brown and crispy on all sides, which should take about 3-5 minutes.
  4. Use a slotted spoon to remove the tofu pieces from the oil. Drain them on paper towels to remove excess oil.
  5. While the tofu is draining, prepare the sauce. In a bowl, mix together the soy sauce, chili sauce, minced garlic, and half of the chopped green onions. This spicy-tangy mixture will be absorbed by the hot tofu, infusing it with flavor.
  6. Toss the fried tofu in the sauce until they're well coated. Make sure each piece is thoroughly covered for maximum flavor.
  7. Serve the stinky tofu hot, garnished with the remaining chopped green onions. For an authentic street food experience, use wooden skewers to eat them!

Tips

  • 💡 For an even more authentic experience, look for fermented tofu in Asian markets. It has a stronger aroma and flavor, which is characteristic of stinky tofu.
  • 💡 Adjust the amount of chili sauce according to your spice tolerance.
  • 💡 You can also serve the stinky tofu with a side of pickled vegetables for a refreshing contrast.
