Wood chips
2 cups (hickory or apple)
Olive oil
2 tablespoons
Black pepper
1 teaspoon
Salt
1 teaspoon
Onion powder
1 teaspoon
Garlic powder
1 teaspoon
Smoked paprika
2 tablespoons
Chicken drumsticks
2 pounds
BBQ sauce
1 cup (for serving)

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Soak the wood chips in water for at least 30 minutes to prevent them from burning too quickly.
  3. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and black pepper to create a spice rub.
  4. Pat the chicken drumsticks dry with paper towels. Rub them generously with olive oil to help the spice mixture adhere.
  5. Sprinkle the spice mixture evenly over the drumsticks, ensuring they are well coated.
  6. Place the soaked wood chips in the smoker box or directly on the charcoal.
  7. Arrange the chicken drumsticks on the smoker rack, making sure they are not touching each other for even smoking.
