The duck is seasoned with a robust blend of spices, creating a flavor profile that is complex, satisfying, and utterly delicious. Ingredients

Whole duck
1 (4-5 lbs)
Wood chips (apple or hickory)
3 cups, soaked in water for 1 hour
Salt
1 tablespoon
Black pepper
1 tablespoon
Garlic powder
1 tablespoon
Onion powder
1 tablespoon
Paprika
1 tablespoon

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Rinse the whole duck under cold running water. Pat it dry thoroughly with paper towels.
  3. In a small bowl, combine the salt, black pepper, garlic powder, onion powder, and paprika. This will serve as your dry rub.
  4. Apply the dry rub all over the duck, making sure it is evenly coated. Do not forget to season the cavity as well.
  5. Place the duck on the smoker rack, positioning it breast side up.
  6. Add the pre-soaked wood chips to the smoker box or directly onto the coals.
  7. Close the smoker lid and smoke the duck for approximately 3 hours. The duck is ready when the internal temperature at the thickest part of the thigh reaches 165°F (74°C).
  8. Remove the smoked duck from the smoker. Allow it to rest for 10 minutes before carving to allow the juices to redistribute.
  9. Carve the duck into serving portions. Enjoy this delightful dish hot, ideally paired with a side of roasted vegetables or a fresh garden salad.
