Fresh parsley
a handful, finely chopped
Lemon wedges
1 lemon, cut into wedges
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Garlic powder
1 teaspoon
Smoked paprika
1 teaspoon
Olive oil
2 tablespoons
Fresh oysters
12 oysters, cleaned and shucked

Instructions

  1. Preheat your smoker to 225°F (107°C). Ensure it is clean and ready for smoking.
  2. Prepare the oysters by shucking them carefully. Place the shucked oysters on a baking sheet.
  3. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, salt, and freshly ground black pepper. This will serve as your smokey marinade.
  4. Using a basting brush, gently apply the seasoned olive oil mixture onto the oysters, ensuring they are well-coated.
  5. Place the oysters directly on the smoker grate. Close the lid and smoke for 15-20 minutes, or until the oysters are cooked through and have absorbed the smoky flavor.
  6. Once done, carefully remove the oysters from the smoker using a heat-resistant spatula or tongs.
