Smoky Green Beans with Bacon Vinaigrette
Experience the irresistible combination of tender green beans and crispy bacon, all brought together by a tangy and smoky vinaigrette. This dish transforms simple green beans into a gourmet side that’s bursting with flavor. The smokiness from the paprika complements the savory notes of bacon, while the zesty vinaigrette adds a delightful contrast, making it perfect for any meal or holiday gathering. Originally a Southern staple, this dish has roots in comfort food, showcasing how simple ingredients can create something extraordinary.
Ingredients
- Green beans
- 1 pound, trimmed
- Bacon
- 4 slices, diced
- Garlic
- 2 cloves, minced
- Olive oil
- 3 tablespoons
- Dijon mustard
- 1 tablespoon
- Red wine vinegar
- 2 tablespoons
- Smoked paprika
- 1 teaspoon
- Salt
- to taste
- Black pepper
- to taste
Instructions
- Bring a large pot of salted water to a boil. Add the trimmed green beans and cook until tender, about 5 minutes. Drain and set aside.
- In a large skillet over medium heat, cook the diced bacon until crispy, about 6-8 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate to drain.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- In a small bowl, whisk together the red wine vinegar, Dijon mustard, olive oil, smoked paprika, salt, and black pepper until well combined to create the vinaigrette.
- Add the vinaigrette to the skillet and stir to combine with the bacon drippings. Allow it to warm for about 1 minute.
- Add the cooked green beans to the skillet and toss to evenly coat them in the smoky vinaigrette.
- Transfer to a serving dish and top with the crispy bacon pieces before serving.
Tips
- For a vegetarian version, omit the bacon and add toasted nuts like almonds or walnuts for crunch.
- Feel free to add a squeeze of fresh lemon juice or zest for a refreshing twist.
- You can also substitute the green beans with asparagus or Brussels sprouts for a different flavor profile.
