Ingredients
- Mini marshmallows
- 1 cup
- Chocolate chips
- 1 cup
- Vanilla extract
- 1 teaspoon
- Egg
- 1 large
- Brown sugar
- 1/2 cup, packed
- Granulated sugar
- 1/2 cup
- Unsalted butter
- 1/2 cup (1 stick), softened
- Salt
- 1/4 teaspoon
- Baking powder
- 1/2 teaspoon
- All-purpose flour
- 1 cup
- Graham cracker crumbs
- 1 cup
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt until well combined.
- In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter mixture and mix until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips and mini marshmallows until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are just set. The cookies will continue to firm up as they cool.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Serve warm or store in an airtight container for up to a week.
