
Smores Cookies
These delicious S'mores Cookies are a twist on the classic campfire treat. They are made with graham cracker crumbs, chocolate chips, and mini marshmallows.
Ingredients
- Mini marshmallows (1 cup)
- Chocolate chips (1 cup)
- Vanilla extract (1 teaspoon)
- Egg (1)
- Brown sugar (1/2 cup)
- Granulated sugar (1/2 cup)
- Unsalted butter (1/2 cup, softened)
- Salt (1/4 teaspoon)
- Baking powder (1 teaspoon)
- All (purpose flour - 1 cup)
- Graham cracker crumbs (1 cup)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt.
- In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the chocolate chips and mini marshmallows.
- Using a cookie scoop or tablespoon, drop rounded dough onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
