Instructions
- Begin by seasoning the pork chops on both sides with salt, black pepper, paprika, and garlic powder.
- Heat 1 tablespoon of butter in a large skillet over medium-high heat.
- Once the butter is melted and skillet is hot, add the pork chops. Sear them for 4-5 minutes on each side, or until they're beautifully browned. Once done, remove the pork chops from the skillet and set them aside.
- In the same skillet, melt the remaining tablespoon of butter. Add the thinly sliced onions and sliced mushrooms. Saute them until the onions are caramelized and the mushrooms are golden brown.
- Sprinkle the flour over the sauteed onions and mushrooms, stirring well to coat them evenly. This will help to thicken the gravy.
- Slowly pour in the beef broth while continuously stirring to dissolve the flour and prevent lumps from forming.
- Add in the Worcestershire sauce and minced fresh thyme, stirring to combine these flavors.
- Return the seared pork chops to the skillet, nestling them into the gravy. Ensure they are partially submerged in the gravy for maximum flavor infusion.
- Reduce the heat to low, cover the skillet, and let everything simmer for about 30 minutes, or until the pork chops are cooked through and tender.
- Serve your Southern-Style Smothered Pork Chops hot, smothered with generous spoonfuls of the rich onion and mushroom gravy. Enjoy with a side of mashed potatoes or green beans for a complete, comforting meal.
