Snoek Braai

Ingredients
- 1 whole, cleaned (about 2-3 pounds) Snoek fish
- 1/2 cup Apricot jam
- 4 cloves, minced Garlic
- 1/4 cup, melted Unsalted butter
- 2 tablespoons Lemon juice
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper

Instructions
- Prepare the grill for medium-high heat. If using charcoal, let the coals burn down until they are covered with white ash.
- In a small bowl, combine the apricot jam, minced garlic, melted butter, lemon juice, salt, and black pepper. Mix well to create the basting sauce.
- Place the cleaned snoek on a large piece of aluminum foil or on a clean grill grate.
- Baste the snoek generously with the apricot mixture, making sure to coat both sides.
- Grill the snoek for about 10-12 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Baste occasionally with the remaining sauce during grilling.
- Once cooked, remove the snoek from the grill and let it rest for a few minutes.
- Garnish with fresh herbs before serving.
