Ingredients

Original recipe serves 4

Snoek fish
1 whole, cleaned (about 2-3 pounds)
Apricot jam
1/2 cup
Garlic
4 cloves, minced
Unsalted butter
1/4 cup, melted
Lemon juice
2 tablespoons
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Fresh herbs (such as parsley or cilantro)
for garnish

Instructions

  1. Prepare the grill for medium-high heat. If using charcoal, let the coals burn down until they are covered with white ash.
  2. In a small bowl, combine the apricot jam, minced garlic, melted butter, lemon juice, salt, and black pepper. Mix well to create the basting sauce.
  3. Place the cleaned snoek on a large piece of aluminum foil or on a clean grill grate.
  4. Baste the snoek generously with the apricot mixture, making sure to coat both sides.
  5. Grill the snoek for about 10-12 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Baste occasionally with the remaining sauce during grilling.
  6. Once cooked, remove the snoek from the grill and let it rest for a few minutes.
  7. Garnish with fresh herbs before serving.
