Snow Fungus and Pear Soup

Experience a delightful and nourishing taste of tradition with this Snow Fungus and Pear Soup, a cherished dessert soup in Chinese culture. Known for its health benefits, this sweet, refreshing soup combines the delicate texture of snow fungus with the crispness of Asian pears, complemented by the natural sweetness of goji berries and red dates. Enjoy it warm for a comforting treat or chilled for a refreshing dessert to cleanse the palate.

Serves 4-6

Ingredients

Snow fungus
1 piece, soaked
Asian pears
2, peeled and diced
Rock sugar
1/2 cup (adjust to taste)
Water
8 cups
Goji berries
1/4 cup
Red dates
6-8, pitted and halved

Instructions

  1. Soak the snow fungus in water for about 30 minutes, or until it expands. Trim off any yellow parts and tear into small, manageable pieces.
  2. In a large pot, combine the soaked snow fungus, diced Asian pears, and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, add the rock sugar, and let the mixture simmer for about 2 hours, stirring occasionally.
  4. In the last 30 minutes of cooking, add the red dates and goji berries to the pot, allowing their flavors to infuse into the soup.
  5. Taste and adjust sweetness by adding more rock sugar if desired. Serve hot for a comforting dessert or chill in the refrigerator for a refreshing treat.

Tips

  • 💡 For added flavor, consider incorporating a few slices of ginger during the simmering process.
  • 💡 You can substitute rock sugar with brown sugar or honey based on your preference.
  • 💡 This soup can be refrigerated for up to a week, making it a great make-ahead dessert.
