Instructions
- Soak the snow fungus in water for about 30 minutes, or until it expands. Trim off any yellow parts and tear into small, manageable pieces.
- In a large pot, combine the soaked snow fungus, diced Asian pears, and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, add the rock sugar, and let the mixture simmer for about 2 hours, stirring occasionally.
- In the last 30 minutes of cooking, add the red dates and goji berries to the pot, allowing their flavors to infuse into the soup.
