Snow fungus
1 piece, soaked
Asian pears
2, peeled and diced
Rock sugar
1/2 cup (adjust to taste)
Water
8 cups
Goji berries
1/4 cup
Red dates
6-8, pitted and halved

Instructions

  1. Soak the snow fungus in water for about 30 minutes, or until it expands. Trim off any yellow parts and tear into small, manageable pieces.
  2. In a large pot, combine the soaked snow fungus, diced Asian pears, and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, add the rock sugar, and let the mixture simmer for about 2 hours, stirring occasionally.
  4. In the last 30 minutes of cooking, add the red dates and goji berries to the pot, allowing their flavors to infuse into the soup.
  5. Taste and adjust sweetness by adding more rock sugar if desired. Serve hot for a comforting dessert or chill in the refrigerator for a refreshing treat.
