Green onions
2, sliced for garnish
Sesame seeds
1 tablespoon, toasted
Honey
1 tablespoon
Sesame oil
1 tablespoon
Soy sauce
3 tablespoons
Snow peas
1 cup
Carrots
2 medium, julienned
Bell peppers
1 large, sliced
Ginger
1 tablespoon, freshly grated
Garlic
2 cloves, minced
Vegetable oil
1 tablespoon
Soba noodles
200 grams

Instructions

  1. Prepare the soba noodles as per the package instructions. Once cooked, drain well and set aside.
  2. Heat the vegetable oil in a large wok or skillet over medium heat.
  3. Add the minced garlic and freshly grated ginger. Stir fry for about 1 minute, until they release their aroma.
  4. Introduce the sliced bell peppers, julienned carrots, and snow peas to the wok. Stir fry for approximately 3-4 minutes, until the vegetables are slightly tender yet still retain a bit of crunch.
  5. In a separate small bowl, whisk together the soy sauce, sesame oil, and honey. This forms your flavorful stir-fry sauce.
  6. Add the cooked soba noodles to the wok. Pour the prepared sauce over the noodles and vegetables, tossing well to ensure everything gets a good coating.
  7. Let everything cook together for an additional 2-3 minutes until the noodles are heated thoroughly.
