Ingredients
- Chickpea flour
- 1 cup
- Water
- 1 cup
- Olive oil
- 3 tablespoons (plus extra for greasing and drizzling)
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon

Instructions
- In a large mixing bowl, whisk together the chickpea flour, water, 3 tablespoons of olive oil, salt, and black pepper until smooth. The batter should be thin and pourable.
- Cover the bowl with a kitchen towel or plastic wrap and let the batter rest for at least 30 minutes at room temperature. This resting period allows the flavors to meld and the flour to absorb the water.
- Preheat your oven's broiler to high. While it heats, lightly grease a 12-inch oven-safe nonstick skillet with olive oil and place it in the oven to get hot, about 5 minutes.
- Carefully remove the hot skillet from the oven. Pour the batter into the skillet, tilting it to ensure an even layer.
- Return the skillet to the broiler and cook until the top of the socca is browned and blistered, about 5 minutes. Keep a close eye on it to prevent burning.
- Once cooked, remove the skillet from the oven and let it cool for a minute before cutting the socca into wedges.
- Serve hot, drizzled with extra olive oil and topped with your choice of fresh herbs, chili flakes, or a squeeze of lemon juice for added flavor.
