Sohan - Persian Saffron Brittle Candy

- 1/2 cup Water
- 1/4 cup Unsalted butter
- 1/2 teaspoon Saffron threads
- 1 cup, chopped Pistachios
- 1 cup, chopped Almonds
- 1 teaspoon Cardamom powder

Instructions
- In a medium saucepan, combine the sugar and water over medium heat. Stir gently until the sugar dissolves completely.
- Allow the mixture to cook, without stirring, until it thickens slightly, about 5-7 minutes.
- Add the unsalted butter, saffron threads, chopped almonds, chopped pistachios, and cardamom powder to the saucepan. Stir continuously to combine all ingredients.
- Continue to cook the mixture over medium heat, stirring constantly, until it reaches a golden caramel color and thickens further, approximately 10-15 minutes.
- Remove the saucepan from heat and act quickly: pour the mixture onto a greased baking sheet or silicone mat. Use a greased spatula to spread the mixture evenly to a thickness of about 1/4 inch.
- Let the sohan cool and harden completely at room temperature, which may take 1-2 hours.
- Once set, break the sohan into small pieces or cut it into desired shapes.
- Store the sohan in an airtight container at room temperature to maintain its freshness.
Tips
- For an extra touch of flavor, lightly toast the almonds and pistachios in a dry skillet before adding them to the mixture.
- You can substitute some of the nuts with walnuts or hazelnuts for a different flavor profile.
