Solianka Soup
Solianka is a beloved traditional Russian soup, celebrated for its bold and tangy flavors. Ingredients
- 2 tablespoons Vegetable oil
- 1 large, chopped Onion
- 3 cloves, minced Garlic
- 200g, diced Beef
- 150g, diced Ham
- 250g, sliced Sausages
- 400g, diced (canned or fresh) Tomatoes
- 3 medium, chopped Pickles
- 100g, pitted and sliced Olives
- 2 tablespoons Capers
- 2 Bay leaves
- 1 teaspoon Paprika
- 1/2 teaspoon Black pepper
- to taste Salt
- 1, sliced Lemon
- 2 tablespoons, chopped Fresh dill
- for serving Sour cream

Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, cooking until the onions become translucent, about 5 minutes.
- Stir in the diced beef, ham, and sliced sausages. Cook until the meats are browned on all sides, about 7-10 minutes.
- Add the diced tomatoes, chopped pickles, sliced olives, capers, bay leaves, paprika, black pepper, and salt. Mix well to combine all the ingredients.
- Pour in enough water to cover the ingredients, typically about 6 cups. Bring to a boil, then reduce the heat and let it simmer for 45 minutes to allow the flavors to meld.
- After 45 minutes, remove the bay leaves and add the lemon slices and fresh dill. Simmer for an additional 5 minutes.
- Serve hot in bowls, topped with a generous dollop of sour cream for a rich finish.
