Ingredients

- 2 tablespoons
- Coconut milk
- 1 can (13.5 ounces)

- Carrots
- 2 medium, peeled and sliced
- Fish sauce
- 2 tablespoons

- 1 teaspoon
- Salt
- 1 teaspoon, or to taste
- Fresh cilantro

Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger; sauté for about 3-5 minutes until fragrant and the onion is translucent.
- Stir in the chicken pieces and cook for about 5-7 minutes until browned on all sides.
- Sprinkle the curry powder over the chicken and stir to coat evenly.
- Pour in the coconut milk and bring to a gentle simmer.
- Add the diced potatoes, sliced carrots, fish sauce, sugar, and salt. Stir well to combine all ingredients.
- Cover the pot and let the curry simmer for about 30 minutes, or until the chicken is fully cooked and the vegetables are tender.
