Ingredients
- Water (8 cups)
- Salt (to taste)
- Onion (1, chopped)
- Celery (2 stalks, chopped)
- Carrots (2, sliced)
- Potatoes (2, diced)
- Pasta shells (galets) (1 cup)
- Pork ribs (1 pound)
- Chicken (1 whole (about 3-4 pounds))
- Beef bone (1 large)
Instructions
- In a large pot, combine the beef bone, whole chicken, pork ribs, and water. Bring to a rapid boil over high heat.
- Once boiling, reduce the heat to low and allow the mixture to simmer gently for about 2 hours. This will create a rich broth.
- After 2 hours, add the diced potatoes, sliced carrots, chopped celery, and chopped onion to the pot. Season generously with salt to taste.
- Continue to simmer the soup for another 30 minutes, or until the vegetables are tender and the flavors have melded beautifully.
- In a separate pot, bring water to a boil and cook the pasta shells (galets) according to the package instructions until al dente. Drain and set aside.
- Once the soup is ready, stir in the cooked pasta shells, allowing them to absorb the flavors for an additional 5 minutes on low heat.
- Serve the soup hot in bowls, ensuring each serving includes a hearty mix of meat, vegetables, and pasta for a fulfilling meal.
