Pork ribs
1 pound
Chicken
1 whole (about 3-4 pounds)
Beef bone
1 large

Instructions

  1. In a large pot, combine the beef bone, whole chicken, pork ribs, and water. Bring to a rapid boil over high heat.
  2. Once boiling, reduce the heat to low and allow the mixture to simmer gently for about 2 hours. This will create a rich broth.
  3. After 2 hours, add the diced potatoes, sliced carrots, chopped celery, and chopped onion to the pot. Season generously with salt to taste.
  4. Continue to simmer the soup for another 30 minutes, or until the vegetables are tender and the flavors have melded beautifully.
  5. In a separate pot, bring water to a boil and cook the pasta shells (galets) according to the package instructions until al dente. Drain and set aside.
  6. Once the soup is ready, stir in the cooked pasta shells, allowing them to absorb the flavors for an additional 5 minutes on low heat.
