Sopa de Pedra (Stone Soup)
Sopa de Pedra, also known as Stone Soup, is a hearty, flavorful soup that hails from Portugal. This delicious dish is steeped in tradition, with a charming folk tale at its heart - a clever traveler who convinces a town to collectively contribute ingredients to a soup that starts with nothing more than a stone. - 1/2 head, chopped Cabbage
- 3, minced Garlic cloves
- 2, chopped Onions
- 2, peeled and sliced Carrots
- 2 large, peeled and cubed Potatoes
- 1 cup, soaked overnight Red kidney beans
- 1 cup, sliced Chorizo
- 2 Pork trotters
- 1 Pork ear
- 1, well-cleaned Stone

Instructions
- Prepare the beans by soaking them in plenty of water overnight.
- In a large pot, add the stone, pork ear, trotters, and chorizo. Fill the pot with enough water to cover the ingredients and bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 1 hour to infuse the water with the flavors of the meat.
- Add the soaked and drained beans, potatoes, carrots, onions, and garlic to the pot. Stir well and let it cook for another 30 minutes, or until the vegetables are tender.
- Lastly, add the chopped cabbage to the pot and season the soup with salt and pepper. Let it cook for an additional 15 minutes.
- Before serving, remove the stone from the pot. Ladle the soup into bowls and serve it hot for a comforting and hearty meal.
Tips
- You can substitute the pork ear and trotters with other pork cuts if preferred.
- For a vegetarian version, omit the meats and use vegetable stock instead of water.
- Make sure to clean the stone thoroughly if you choose to include it for tradition's sake. Otherwise, you can omit it.
