Soparnik is a beloved traditional Croatian dish from the Dalmatian region, celebrated for its delightful combination of thin, flaky dough and a savory filling of Swiss chard, onions, and garlic. Ingredients
- All-purpose flour
- 3 cups
- Water
- 1 cup (more if needed)
- Olive oil
- 3 tablespoons (for filling) + extra for brushing
- Onion
- 1 large, finely chopped
- Garlic
- 3 cloves, minced
- Swiss chard
- 1 pound, washed and chopped
- Salt
- 1 teaspoon (more to taste)
- Black pepper
- 1/2 teaspoon (or to taste)
Instructions
- In a large mixing bowl, combine the flour and 1 teaspoon of salt. Gradually add water and mix until a dough forms. Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes. Wrap in plastic wrap and let it rest for 30 minutes.
- While the dough is resting, heat 3 tablespoons of olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 5 minutes.
- Add the chopped Swiss chard to the pan, cooking until wilted, approximately 3-5 minutes. Season the mixture with salt and pepper, adjusting to taste. Remove from heat and allow it to cool slightly.
- Preheat the oven to 400°F (200°C).
- Divide the rested dough into two equal parts. Roll out one part into a thin rectangle (about 1/8 inch thick) on a floured surface.
- Spread half of the Swiss chard mixture evenly over the rolled-out dough, leaving a small border around the edges.
- Roll out the second part of the dough into another thin rectangle and carefully place it on top of the Swiss chard mixture.
- Press the edges of the dough together to seal the filling tightly. Use a fork to crimp the edges for a decorative touch.
- Transfer the Soparnik to a baking sheet lined with parchment paper. Brush the top lightly with olive oil.
- Bake in the preheated oven for 30 minutes, or until the crust is golden brown and crispy.
- Remove from the oven and let it cool slightly before slicing into squares or triangles. Serve warm and savor the flavors!
