Unsalted butter

Yellow onions
4 large, thinly sliced
All-purpose flour
2 tablespoons
Beef broth
6 cups
Dry white wine
1 cup

Baguette
1, sliced into 1-inch thick pieces
Gruyère cheese
2 cups, grated

Instructions

  1. In a large pot, melt the unsalted butter over medium heat.
  2. Add the sliced yellow onions to the pot and cook, stirring occasionally, until they become caramelized and golden brown, about 30-40 minutes. Be patient, as this step is crucial for developing flavor.
  3. Once the onions are caramelized, sprinkle the all-purpose flour over them and stir well to coat, cooking for an additional 2 minutes to eliminate any raw flour taste.
  4. Pour in the beef broth and dry white wine, stirring to combine all ingredients. Bring the soup to a gentle simmer.
