South African Roosterkoek with Refreshing Fruit Salad

- Bread flour

- Instant yeast
- 2 teaspoons
- Sugar

- Salt

- Warm water
- 1 cup (110°f/43°c)
- Lemon juice
- 2 tablespoons
- Honey
- 3 tablespoons
- Mixed fruit (e.g., strawberries, bananas, apples, grapes)
- 4 cups, chopped
Instructions
- In a large mixing bowl, combine the bread flour, instant yeast, sugar, and salt. Mix well to ensure all dry ingredients are evenly distributed.
- Gradually add the warm water to the dry mixture, stirring with a wooden spoon until a shaggy dough forms.
- Transfer the dough to a floured surface and knead for about 5-7 minutes, or until the dough is smooth and elastic.
- Divide the dough into small balls (about the size of a golf ball) and place them on a lightly greased baking sheet. Cover with a kitchen towel and let rise in a warm place for about 1 hour, or until doubled in size.
- Preheat a grill to medium heat. Place the risen dough balls on the grill and cook for about 12-15 minutes, turning occasionally, until they are golden brown and cooked through.
- While the roosterkoek is grilling, prepare the fruit salad. In a large bowl, combine the chopped mixed fruit, honey, and lemon juice. Toss gently to coat the fruit evenly with the honey and lemon.
- Once the roosterkoek is golden brown, remove from the grill and serve warm alongside the refreshing fruit salad.
