Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on paper towels to drain, keeping the bacon grease in the skillet.
- In the same skillet, if there isn’t enough bacon grease, add 1 tablespoon of olive oil. Heat the skillet over medium heat and add the diced bell pepper and onion. Sauté until softened, about 5 minutes.
- Add the corn to the skillet, stirring well to combine with the onions and bell peppers. Cook for an additional 5-7 minutes, or until the corn is heated through and begins to caramelize slightly, enhancing its natural sweetness.
- Crumble the crispy bacon and add it back into the skillet. Season the mixture with salt and black pepper to taste, stirring to combine all the flavors harmoniously.
- Remove from heat and serve hot as a delectable side dish that pairs wonderfully with grilled meats, fried chicken, or hearty main courses.
Tips
- For an extra kick, consider adding a pinch of cayenne pepper or a dash of hot sauce to the corn mixture.
- If fresh corn is out of season, frozen corn can be used as a convenient alternative; just be sure to thaw it completely before cooking.
- Feel free to experiment with additional vegetables such as zucchini or diced jalapeños for added flavor and nutrition.
