Ingredients

Original recipe serves 4

All-purpose flour
2 cups
Eggs
3 large
Milk
1/2 cup
Salt
1 teaspoon
Nutmeg
1/4 teaspoon
Unsalted butter
2 tablespoons (for serving)
Chopped fresh parsley
2 tablespoons (for garnish)

Instructions

  1. In a large bowl, whisk together the flour, salt, and nutmeg.
  2. In a separate bowl, beat the eggs and milk together until well combined.
  3. Gradually add the egg mixture to the flour mixture, stirring until a thick, sticky batter forms.
  4. Bring a large pot of salted water to a boil.
  5. Using a spaetzle maker or a colander with large holes, press the batter through into the boiling water. Alternatively, you can drop small spoonfuls of batter directly into the water.
  6. Cook the spaetzle for about 2-3 minutes, or until they float to the surface. Remove them with a slotted spoon and transfer to a bowl.
  7. In a skillet, melt the butter over medium heat and toss the cooked spaetzle to coat.
  8. Garnish with chopped parsley and serve warm.
