Ingredients

Original recipe serves 4

All-purpose flour
2 cups
Eggs
4, large
Milk
1/2 cup
Salt
1 teaspoon
Nutmeg
1/4 teaspoon, freshly grated
Butter
4 tablespoons
Chopped parsley
2 tablespoons

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, eggs, milk, salt, and freshly grated nutmeg. Mix until a smooth, thick batter forms.
  2. Bring a large pot of salted water to a rolling boil.
  3. Using a spätzle maker or a large-holed colander, press the batter through into the boiling water. Work in batches to prevent overcrowding.
  4. Boil the spätzle for about 2 minutes, or until they float to the surface. This is a sign that they're cooked.
  5. Use a slotted spoon to transfer the cooked spätzle to a colander to drain well.
  6. In a large skillet, melt the butter over medium heat. Add the drained spätzle and sauté for 3-4 minutes, or until they turn lightly golden brown.
  7. Remove from heat and sprinkle the spätzle with chopped parsley. Serve immediately while hot and enjoy!
