All-purpose flour

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, eggs, milk, salt, and freshly grated nutmeg. Mix until a smooth, thick batter forms.
  2. Bring a large pot of salted water to a rolling boil.
  3. Using a spätzle maker or a large-holed colander, press the batter through into the boiling water. Work in batches to prevent overcrowding.
  4. Boil the spätzle for about 2 minutes, or until they float to the surface. This is a sign that they're cooked.
  5. Use a slotted spoon to transfer the cooked spätzle to a colander to drain well.
