Instructions
- In a large mixing bowl, combine the all-purpose flour, eggs, milk, salt, and freshly grated nutmeg. Mix until a smooth, thick batter forms.
- Bring a large pot of salted water to a rolling boil.
- Using a spätzle maker or a large-holed colander, press the batter through into the boiling water. Work in batches to prevent overcrowding.
- Boil the spätzle for about 2 minutes, or until they float to the surface. This is a sign that they're cooked.
- Use a slotted spoon to transfer the cooked spätzle to a colander to drain well.
- In a large skillet, melt the butter over medium heat. Add the drained spätzle and sauté for 3-4 minutes, or until they turn lightly golden brown.
